In Victoria, individuals aiming to become Food Safety Supervisors must obtain competencies in the national units SITXFSA006 for Level 2 safe food handling practices and SITXFSA005 for Level 1 hygienic practices for food safety. 

 The eight-hour course includes both Level 1 Food Safety and Level 2 Food Safety Supervisor training. It equips participants with the necessary knowledge to safely handle food through its storage, preparation, display, service, and disposal stages. Participants will learn to adhere to procedures specified in a venue’s food safety program, based on HACCP principles. 

  This course is relevant for entities required by local governments to have a food safety program. Such entities include but are not limited to restaurants, cafes, clubs, hotels, educational institutions, aged care facilities, correctional centers, hospitals, and various catering services. It targets all food handlers including cooks, chefs, caterers, kitchen hands, food and beverage attendants, and managerial or ownership roles. 

  Course content covers essential food safety practices including following food safety programs, storing, preparing, and disposing of food safely, maintaining cleanliness, and using safe single-use items. Non-compliance with the Food Act 1984 may result in consequences such as registration refusals or suspensions. 

  Upon enrollment, participants receive a course learner guide, with Short Courses Australia providing a hard copy on the day of the session. Successful completion of the course grants a certificate in the SITXFSA006 unit of competence. 

  The course is split into two parts: Part 1 on hygienic food safety practices (morning) and Part 2 on safe food handling practices (afternoon). Credit transfers are available for those who already have the SITXFSA006 competency. 

  It’s important to complete both the SITXFSA005 and SITXFSA006 units. The certificate is recognized across various Australian states and territories, with some requiring a bridging course for differences in local requirements. 

  The course cost includes all materials, assessments, and digital certificates, with additional fees for paper-based certificates. Participants must bring proof of identity to the training session.
